Valentines Cookies Your Sweetheart Will Love!

If you have to bake cookies for a school party or you want to bake something special for the ones you love this Valentines Day, these cookies are quick and easy to make and taste delicious. I’ve been using this recipe for at least twenty-five years and it never fails me. The cookies are always that ideal balance between not too hard and not too soft. If Goldilocks was going to pick cookies that are “Just Right” it would be these!

Ingredients
2 1/2 Cups of Flour
1 teaspoon of baking powder
1/2 teaspoon of salt
3/4 cup of soft butter or margarine
I cup of sugar
2 eggs
1 teaspoon of vanilla

Recipe Directions

Sift together 2 1/2 Cups of Flour, 1 teaspoon of baking powder and 1/2 teaspoon of salt in bowl

In a separate bowl put 3/4 cups of soft butter or margarine (not runny)
I cup of sugar, 2 eggs and 1 teaspoon of vanilla and mix with electric mixer (if you have one) until light and fluffy

Blend in the flour mixture until smooth

Refrigerate for 1 hour if time allow

Roll out the dough on a floured surface

Tip #1 When it comes to rolling out the dough, roll it as thin as you can (1/4 of an inch) without it being too flimsy because they puff up when they bake and will be thicker when they’re done.

Tip #2 Use smaller cookie cutter if you’re making a larger amount like for a class party or other event. Many cookie cutters these days can be quite large and you end up having logistic issues when you try to cram 30 large hearts into the Tupperware container to send in for the school party.

Put cookies on a greased cookie sheet and bake at 325 for 8 – 10 minutes. Check the cookies as early as 6 minutes because if they are thin they could be done in this time. The bottoms brown fast so you have to really watch them and catch them when there is a light brown color just around the edges on the bottom and remove them from the pan immediately.

This recipe makes about 3 dozen 3″ cookies

    Btw, I just stumbled upon your post about a craft room (comments are closed there). Oh. My. God. I’m so jelly. I have one room as my bedroom, office, craft space – all in one. A designated craft room is my dream!

    1. Awe thank you Alphe – it was a long time coming but I sure love it. I hear you about having everything in one room – I was sharing space with my washing machine before we converted this into my craft room – it use to be a big room for my husband and grandsons trains but they’re all getting older, weren’t spending time using it so the trains got the boot and I finally got a craft room lol

    1. I mix milk with icing sugar. I never measure but I’m guessing 1/4 cup of milk to a cup of icing sugar. I try to have the consistency so that you can hold the cookie and dip it in and pull it up and shake some icing off – should drip but not be too drippy and flip it over. It’s the best icing ever. I did the Ladybug Challenge – was so fun. I just posted it.   2. I miss they days of being up into the night baking class cookies! I too have a recipe i use for shortbread cookies i use to make and decorate for most holidays. I changed it up and made choco chip with recipe cards one year for xmas and my LO classmates parents thanked me saying what an awesome idea and that the cookies were a family fave now. The best recipes are ones used through time and passed on…
